Lunch Dish

So I got all worked up over the sexy undies post this morning, and then reality dawned. Saturdays at casa de Xandra are all about getting hot'n'sweaty doing...

Yardwork.

If it involves the yard, the garage, or the shed out back, then it happens on Saturday. And it's usually dirty. But sweaty ain't so bad, because getting sweaty means you get to cool off, too. And I found one of my old favorite recipes for a great spring or summer cool-off treat. It's no-bake and involves cool-whip and whoa, does it make you go, "mmm..."

NO-BAKE MARGARITA PIE

INGREDIENTS:
  • 1 1/4 cups crushed pretzels
  • 1/2 cup butter, melted
  • 1/4 cup white sugar
  • 2 limes, zested and juiced
  • 1/4 cup orange juice
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (8 ounce) container frozen whipped topping, thawed

DIRECTIONS:
  1. In a medium bowl, combine crushed pretzels, melted butter, and sugar. Press mixture into a pie pan.

  2. In a large bowl, mix together lime juice, lime zest, orange juice, and sweetened condensed milk. Fold in whipped topping. Spoon filling into pretzel crust. Chill pie for 25 to 30 minutes.
And if you start making it now, it'll be ready by dinner... :D
